'TRULY'S TRIPLE CHOCOLATE CUPCAKES'.
All you need is:
- 185g Plain Flour
- 115g Dark Chocolate
- 85g Butter -I prefer unsalted (+ more for greasing)
- 2 Large Eggs or 3 Medium (separated)
- 1 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
- 1 tsp Vanilla Extract
- A pinch of Salt
- 175g Soft Brown Sugar
- 250ml Semi-Skimmed Milk
And for the icing:
- 300g Milk Chocolate
- 100g White Chocolate
- 60ml Double Cream
- 2 tbsp Unsalted Butter (at room temperature)
- 1/2 tsp Vanilla Extract
And although that all looks like masses, I never usually follow the recipe so what is listed above is just a basic outline!
- First, preheat oven to 190 degrees/ gas mark 5. Line a cupcake tin for about 16+ cupcakes (I always tend to have more).
- Melt the chocolate either in the microwave or over hob.
- Whilst the chocolate cools, cream the butter and sugar together using an electric hand beater until pale and smooth. (This may take a while).
- In a separate bowl and with clean beaters beat the egg yolks for several mins. Slowly add the egg yolks to the creamed butter and sugar and beat well. Then, add the chocolate to this mixture and beat well.
- Combine the flour, baking powder, bicarbonate of soda and salt.
- Combine the milk and vanilla in a jug. Add the flour mixture to the chocolate, butter and sugar, alternating with the milk and vanilla. Beat very well after each addition.
- In a clean bowl, whisk the egg whites until soft peaks start to form. Carefully fold the eggs whites into the main batter- allowing much air to get into the mixture using light movements.
- Spoon the mixture out equally into cake cases.
- Place the trays in the oven and bake for 20-25 mins. When they come out, leave in their tins for 10 mins or so before placing on a wire rack to cool.
And for the icing:
- Melt the chocolate either in the microwave or over the hob.
- Once melted, add cream, butter and vanilla extract and beat well with electric hand mixer until smooth and well combined.
- Ice each cupcake and decorate however you choose! I tend to grate white chocolate over it or cover with sprinkles!!!
