Truly Scrumptious: Marble Cakes

Hello!

If you are like me, then you will be bored with nothing today... and if you are, then you're in for luck! Because I have for you my very own half 'n' half cupcakes. (Ok, I get the message: I give recipes for cupcakes a lot).

You will need- For the cup-cakes:

60g white chocolate
60g dark chocolate
1 tbsp cocoa powder- or hot chocolate powder

150g unsalted butter (room temp)
150g caster sugar
3 medium eggs
150g self-raising flour
+ a tiny bit of baking powder/bicarb. of soda

For the icing:

110g unsalted butter (also room temp)
250g icing sugar
150g white/milk/dark -or a combination- chocolate

Method:

1. Preheat the oven to 160'C. Line a tray with about 16 cupcake cases (but I always tends to make more).

2. Cream the butter and caster sugar together until light and fluffy. Gradually add the eggs, alternating with a spoon of flour. Add any remaining flour and mix.

3. Next divide the mixture into two separate bowl: on for the white choc. and one for the dark chocolate.

4. Melt the white chocolate in a heatproof bowl over a pan of simmering water or in the microwave.  Do not burn! Once melted, add to one bowl.

5. Repeat with the dark chocolate and combine with the mixture in the other bowl.

4. Spoon a small amount of dark chocolate mixture into each case and then some white chocolate too. You can either swirl the mixture around creating a marbled effect or just leave them separately like I have done in the picture.

5. Bake for around 30 minutes and a skewer comes away clean when inserted. Leave to cool.

For the icing:

1.Cream the butter and icing sugar together until light and fluffy. Divide the buttercream into two bowls.

2. Melt the white chocolate and dark chocolate separately using the same techniques as earlier. Once melted, combine with the buttercream in one of the bowls- and the other flavour in the remaining bowl.

3. Add the cocoa powder to the dark chocolate buttercream and mix thoroughly. If the either of the buttercream mixes feels too thick, loosen with milk or cream.

4. Now ice the cakes in your chosen way, and enjoy!

Hope you enjoy,
Truly (Scrumptious) xxx
